Construction of the ‘Cibrèo’ restaurant within the historical building of the hotel Helvetia & Bristol. The restaurant was created inside the hotel’s new ‘Bristol wing’, once the headquarters of the prestigious Banca di Roma, in the heart of Florence. Restoration of the central hall’s colonnade and architectural elements of the building and its original 19th-century structure.

The cooperation with a historic Florentine venue leads to the opening of the new Cibreo Caffè and restaurant within the hotel Helvetia & Bristol. The restaurant aims to be a point of reference for those seeking an exclusive venue for a coffee, lunch, aperitif, or special dinner in the heart of Florence’s historic center.
The Cibrèo Caffè’s interior and outdoor pavement terrace, which offers a special view of the historical facades of the Hotel and Palazzo Strozzi, both provide a refined ambiance and splendidly reflect the warmth and authenticity of Florentine.
The new Cibreo Restaurant is located in the hotel’s new ‘Bristol wing’, once the headquarters of the prestigious Banca di Roma; the venue’s sophisticated image was conceived by Massimo Adario, the renowned Italian architect. The entrance is in Via Vecchietti, and the gallery hall overlooks Via del Campidoglio through ample windows that allow the light to flow in.
Staredil created and renovated the restaurant spaces, providing architect Adario with expert know-how in fine renovation, and careful handling of the finishing work and conservative restoration. Staredil combined its experience in renovations with the organizational capacity needed to plan and execute the work in a very short time. The structural work involved the restoration and conservative renovation of many of the building’s original 19th-century architectural features.
The spacious colonnaded central hall is particularly impressive: here, the original architectural features were attentively and expertly restored to preserve its authenticity and provide an elegant atmosphere. The painting and varnishing, alongside the finishing and polishing of the original floors, provided the venue with a renewed modern taste while safeguarding the historical context. Boiserie finishing and the creation of retro mirrors painted with wooden frames added hints that enhance warmth and comfort.
All materials used were carefully selected, especially the marble items, that play a central role in the architect’s project. The spectacular Cocktail Bar that dominates the restaurant’s main room makes the new Cibrèo all the more sophisticated and unique. Nine meters long, made entirely of yellow Siena marble and backlit with bottles in the background it is an ideal spot to enjoy cocktails.
The new Cibréo Restaurant inside the Helvetia & Bristol is, at once, an exquisite lunch venue for those who work in the city center of the city, and a perfect stop for tourists and guests of the hotel’s new meeting room who seek excellent quality cuisine and a refined ambiance.
